Discover Traditional Balsamic Vinegar of Modena at a historic acetaia in Castelfranco Emilia, featuring a guided tour, tasting, and pairings with local delicacies.
The experience begins at a family-run acetaia located just outside Modena. Guests are welcomed in the reception area with traditional moka coffee and a glass of Lambrusco di Sorbara Rosé DOP as an aperitif before starting the guided tour.
The route continues through the historic aging rooms, which house over a thousand wooden barrels. Led by a local guide, visitors will learn about the family history, the artisanal process of cooking grape must, and the distinct characteristics that define traditional balsamic vinegar compared to commercial varieties.
The activity concludes with a guided tasting featuring two distinct ages: a 12-year-old vinegar and an Extra Vecchio aged for 25 years. The tasting is accompanied by a selection of regional specialties, including frittatas, focaccia, artisanal ricottas, Parmigiano Reggiano, and ricotta cake, paired with Lambrusco DOP wine.
